ILCARGUM®, locust bean gum E410

LOCUST BEAN GUM IS TASTELESS, GLUTEN-FREE AND ALLERGEN-FREE. IT IS USED IN THE FOOD INDUSTRY AS A THICKENER, EMULSIFIER AND GELLING AGENT.

How to use it

In the food industry, it is used as a thickener and stabilizer:

  • bakery and confectionery products (simple and mixed flours, cakes, pastry...);
  • dairy products (ice cream, sorbets, yoghurt, cream cheese...);
  • gastronomy (sauces, broths, dressing...);
  • canned and deep-frozen products;
  • fruit products (jam, jelly);
  • topping and icing.

 

In cosmetics industry, it is used as an emollient, stabilizer and emulsifier.

ILCARGUM®, an additive for the food industry

ILCARGUM® is the powder obtained by processing the carob seeds, by an highly technological plant and a thermo-mechanical process that preserve the excellent Mediterranean carob properties.

ILCARGUM® is tasteless and off-white with very high viscosity: its ability to adsorb water up to 40% makes it an excellent thickener, stabilizer, emulsifier and gelling agent.

In Food Labels it’s named E410: it's a natural food additive, soluble at high temperatures and facilitates the processing of many other foods.
Locust bean gum is gluten-free and allergen-free.
